How does fruit ripen?

Peaches and strawberries and mangoes, oh my! There’s nothing like biting into a juicy, perfectly ripe piece of fruit. But how does fruit know when to ripen? And how do farmers know when to pick it so that it’s ready and delicious by the time it finally gets to us? We talked to Philadelphia farmer Angel Papineau to get the answer.
